Nut Mace

Nut mace spice is a dried lacy coating (called the aril) that wraps tightly around the nutmeg kernel. This lacy aril, which is red in colour, is carefully removed from the nutmeg's outer shell by hand or with a knife. It is then dried to produce a yellowish-brown spice. It improves the colour, taste, and flavour of foods significantly. It gives the dishes a light saffron colour. Mace spice is used to flavour baked goods, meat and fish dishes, as well as sauces and vegetables.
